(Healthy) Blueberry Oatmeal Scones

Because this week has been crazy with summer school and working I hadn't had a chance to make these delicious breakfast scones (found at Yummy Mummy Kitchen) until Thursday night. Which I guess quickly turned them from a breakfast food in to a dessert, and I am not protesting. And because they are "healthy" I convinced myself that it was okay to eat two... I mean three.

But really, because they are made with oatmeal they do not have as much sugar and you are using fresh blueberries so I'm practically losing weight while I eat them. Ya, let's go with that. 

1 1/2 cups all purpose flour
1 1/4 cup old-fashioned oatmeal
1/4 cup sugar
1 tablespoon baking powder
1/4 teaspoon salt
teasoon lemon zest (No lemons in the house so I used a clementine... improvise)
1/2 cup unsalted butter, melted (all the way!)
1/3 cup milk
1 egg, beaten to blend
1 cup fresh blueberries 


Preheat oven to 425°F. Line a cookie sheet with parchment paper (let's be honest, I almost always use Pam when they say use parchment paper, it's a little thing I like to call breaking the rules. Try it.) Combine first 6 ingredients in large bowl. Mix together butter, milk and egg in another bowl. Add to dry ingredients and stir until just moistened. Mix in blueberries. Scoop 1/4 cup balls of dough and place on cookie sheet a few inches apart.  Bake until light brown, about 15 minutes. Cool slightly on rack. Makes about 10 scones.

What was also really fun about making these scones (other than eating them with a big glass of milk) was the game I created that revolved around hiding the dough from my roommate. She is obsessed with batter and dough: cookie dough, cupcake batter, pancake batter, and new to me, scone dough. So I would take the bowl of dough with me into every room and leave it unattended and then when she would go in for a pinch of precious dough, I would attack her from the back and kick her back into her room like a 5 year old. 
Much fun.
And you can adapt the dough game using any dough or batter. SO versatile
